炒青绿茶干燥工艺技术的研究

摘    要:本文通过对炒青绿茶初制的不同干燥工艺及技术条件的组合和正交试验,提出了较佳的“烘—炒—滚”工艺及其相应的工艺指标,并从产品的精制率、精茶各花色比例及其品质水平,卖价等几方面作了对比和分析,证实了新工艺的可行性。

Abstract:Comparative experiments of combinations of various drying techneques and conditions in inital manufacture of rosted green tea were conducted and the best Firing-Rosting-Rolling process and its corresponding indexes were suggested. The comparison of product rate remanufactured, quality, proportions of remanufactured tea and their qualitative levels, market price confirms the suggested process.
