高原鼢鼠营养成分及价值研究

摘    要:高原鼢鼠(Myospalax baileyi)鼠肉历来有被人们食用的习惯,但其营养价值究竟如何,经对西藏八宿县带回的高原鼢鼠样品进行分析、测试,结果表明,高原鼢鼠肉具有较高的营养价值。主要表现在:高原鼢鼠肉中蛋白质含量高,达26.34/100g,脂肪含量低,12.14g/100g;具有人体所必需的各种矿物质元素如钙、磷、铁、钾、锂、锶等,且含量适中;含有各种主要的脂溶性维生素,VA、VE、VD、VB,VB2等:组成人体蛋白质的20种氨基酸中已测出有18种,其中人体所必需的8种氨基酸全部含有。

Abstract:Constantly,Myospalax baileyi is eaten by people,but how is its nutritive value,we undertook the analysis of the sample that was taken from Tibet,the result showed that Myospalax baileyi meat had high nutritive value:it had high protein,26.34 g/100 g,and low fat,12.14 g/100 g; it exsisted various minerals that was essential to human body such as Ca,P,Fe,K,Li,Sr and their content were suitable; it contained many kinds of fat-soluble Vitamins VB? VE? VD? VB1? VB2; 18 out of the 20 amino acids which made up the human bodys protein had been determined,8 out of the 18 AA were essential to human body.
