甘薯茎尖主要营养成分含量初报

摘    要:为了对甘薯茎叶的开发利用提供理论依据,分析了菜用甘薯茎尖嫩叶营养成分含量。结果表明,甘薯茎叶含水量为85.20%,总糖含量2.19 g/100 g,蛋白质含量较高,为1.69 g/100 g,维生素C含量较丰富,达到78.03 mg/100 g。

Abstract:The nutrient composition content of shoots and leaves of sweet potato was determined to provide the theoretical basis for development and utilization of its shoots and leaves.The results showed that the content of water,total sugar,protein and Vc of shoots and leaves of sweet potato was 85.20%,2.18 g/100g,1.69 g/100g and 78.03 mg/100g respectively.
