摘    要:橄榄油是地中海饮食主要的脂肪来源,其营养丰富,具有预防心脑血管疾病、糖尿病、抗肿瘤、防衰老等功能。介绍了橄榄油的分类、理化特性、营养成分及其保健功能。

Abstract:0live oil is one of main fatty sources for Mediterranean diet.It has rich nutrition,and can reduce cardiovascular and cerebrovascular diseases,diabetes mellitus,some cancers resistance and anti-aging.Classification,physical and chemical properties,nutritive composition and health care function of oil olive are emphatically expounded in this paper.
