摘    要:简要综述了壳聚糖的结构,保鲜机理及其在果品保鲜上的应用,分析了壳聚糖在果品保鲜应用中的现状及其存在的问题,并对其前景进行展望。

Abstract:The structure,mechanism of keeping fresh and application in the storage of fresh fruits of chitosan are summarized in brief,and some questions and current situation of application of chitosan in the storage of fresh fruits are put forward and the outlook is prospected at last.
