摘    要:以解放钟枇杷果实为材料,模拟运输过程中机械伤害对果实采后生理的影响.结果表明:枇杷果实受机械伤害后,丙二醛(MDA)含量上升,呼吸强度和多酚氧化酶(PPO)活性先急剧上升而后下降,类胡萝卜素含量下降,超氧化物歧化酶(SOD)活性先上升后下降.枇杷果肉受机械伤害后SOD活性下降,MDA含量增加,引起果肉生理代谢失调,导致果肉腐败;PPO引起的酶促褐变是导致果肉褐变的主要原因.

Abstract:The physiology changes of loquat flesh were studied with mechanical stress of simulated transporting. The results showed that the respiration rate and the activity of polyphenol oxidase (PPO) increased significantly and then decreased, the content of malonaldehyde (MDA) rose, while soluble solid, carotenoids decreased, and the activity of superoxide dismutase (SOD) decreased after it reached the top. It was also showed that the decrease of SOD activity and the increase of permeability of loquat flesh caused the physiological disorder and flesh decay; the browning caused by PPO was the main factor leading to flesh browing.
