摘    要:为比较品系对鸡肉肌内脂肪和肌苷酸沉积的影响,选取9个品系鸡作为试验材料,采用索氏浸提法提取肌内脂肪,高效液相色谱仪分析肌苷酸含量。结果表明,同一性别不同品系间肌肉肌内脂肪含量存在显著差异(P<0.05),除S07、D99和S06×S07 3个品系外,各品系肌内脂肪母鸡高于公鸡;肌苷酸含量在同一性别内不同品系间差异显著(P<0.05),在S07、D99、S06×S01和S06×S07品系母鸡肌苷酸含量高于公鸡。本试验为鸡的进一步选育,特别对肌肉风味和鲜味特性的育种工作有重要的指导意义。

Abstract:To compare the differences of intramuscular fat and inosine monophosphate between different strains,9 strains of chickens were adopted. Intramuscular fat was extracted and tested by Soxhlet extraction,inosine monophosphate contents were tested using HPLC. Significance tests suggested that,intramuscular fat content differed significantly between different strains (P<0.05),except for strains S07,D99,and S06×S07,the contents of intramuscular fat of female was much higher than that of males; IMP contents differed significantly between different strains (P<0.05),and the inosine monophosphate contents of female was much higher than that of males in stains S07,D99,S06×S01and S06×S07. The current study was very important for further work in poultry breeding,especially in meat quality selection.
