摘    要:豆豉纤溶酶是从中国传统风味食品豆豉中分离得到的一种纤维蛋白酶,具有良好的溶解血栓作用。综述了豆豉纤溶酶产生菌的菌种,豆豉纤溶酶的理化性质、溶栓作用以及分子生物学研究现状。由于豆豉纤溶酶与传统的溶栓剂相比,具有活性高,安全无毒,分子量小,可以通过消化直接吸收等优点,因此具有广阔的应用前景。

Abstract:Fibrinolytic enzyme in douchi could dissolve thrombus effectively.The screening of fibrinolytic enzyme-pruducing strain from douchi,physical and chemical properties,anti-thrombus effect experiment of fibrinolytic enzyme and its molecular biology were reviewed in this paper.It was concluded that fibrinolytic enzyme had advantages of cheap,non-toxic,abound raw material,direct absorption by digestion system,compared to other fibrinolytics.As a favorable thromblytics,fibrinolytic enzyme form douchi had a promising prospect.
