| 摘 要： | 与传统工艺相比,挤压法生产固体焦糖色素具有生产连续、反应时间短、设备简单、成本低和无污染等优点.为此,对挤压法加工固体焦糖色素的挤压机结构参数进行了研究,针对焦糖色素挤压反应的特点,设计了加长型管状模头,研究了这种模头结构的直径、长度以及螺杆长径比对挤出的焦糖色素品质的影响规律,选择了合适的模头尺寸和螺杆长径比.结果表明:在实验条件下,采用20mm×800mm的加长型管状模头,螺杆长径比为1104/65＝17时,挤出的焦糖色素色率最高.

| Abstract: | Extrusion production of solid caramel compared with the traditional process,the advantages are the production has short reaction time,simple equipment,low cost,non-polluting,etc. This paper studies on the configuration parameters of the extruder during extruding caramel pigment.
