超高压提取大豆卵磷脂的工艺研究

摘    要:为了研究超高压提取大豆卵磷脂的最佳工艺条件,采用四因子二次通用旋转组合设计,建立大豆卵磷脂得率与压力、保压时间、乙醇浓度和溶剂原料比的回归方程,得到超高压提取大豆卵磷脂的最佳工艺条件为:提取压力 280 MPa、保压时间 5 min、乙醇浓度 85 %、溶剂原料比 45 mL/g,大豆卵磷脂得率10.51 mg/g。

Abstract:With the aim of optimization of ultrahigh pressure extraction of soybean lecithin, quadratic rotating design was employed to investigate the influence of four factors including pressure, time, concentration of ethanol, ratio of solvent to raw material, and to establish a regression model. The obtained optimum extraction parameters were pressure 280 MPa, time 5 min, concentration of ethanol 85 %, ratio of solvent to raw material 45 mL/g, the yield of soybean lecithin was 10.51 mg/g.
