亚硝酸盐清除剂阻断烟草特有亚硝胺形成的研究

摘    要:目的]研究清除剂对烟草特有亚硝胺(TSNAs)形成的阻断作用。方法]在pH为5.5的等物质的量比亚硝酸钠-降烟碱溶液中,分别添加6种不同的亚硝酸盐清除剂,考察各添加剂对溶液中亚硝化产物N-亚硝基降烟碱(NNN)形成的抑制效率。结果]抗坏血酸、咖啡酸和阿魏酸能有效阻断NNN的形成,当添加剂-亚硝酸盐物质的量比为3.0∶1.0时,抑制率超过90%;二氢咖啡酸、儿茶素、绿原酸的抑制率均超过50%。将6种添加剂应用于混合型卷烟烟丝中进行烟草基质试验,结果表明,咖啡酸、阿魏酸、二氢咖啡酸和儿茶素等是TSNAs形成的有效抑制剂,当添加剂-亚硝酸盐物质的量比为3.0∶1.0时,抑制率均超过50%。结论]咖啡酸、儿茶素和阿魏酸既能抑制pH=5.5溶液中NNN的形成,也可阻断烟草基质系统中TSNAs的形成。

Abstract:Objective] The role of the scavenger in the block of tobacco-specific nitrosamines(TSNAs) formation was researched.Method] In the solution with equal-molar ration of sodium nitrate-nornicotine with pH 5.5,6 different nitrite scavengers were added,and then,the inhibition efficiency of the scavengers on the block of the formation of nornicotine N-nitroso(NNN)——nitration product in solution were analyzed.Results] The formation of NNN could effectively be blocked by ascorbic acid,caffeic acid and ferulic acid.When the molar ratio of additive-nitrite was 3.0∶1.0,the inhibition rate was more than 90%.The inhibition rate of dihydro caffeic acid,catechin,chlorogenic acid was over 50%.The experiment in the tobacco matrix through the mixture of six kinds of additives in tobacco leaf showed that the caffeic acid,ferulic acid,caffeic acid and catechin dihydro was the effective inhibitor to TSNAs formation and when the molar ratio of additives-nitrite was 3.0∶1.0,the inhibitory rate was over 50%.Conclusion] caffeic acid,catechin dihydro and ferulic acid could inhibit the NNN formation in the solution with pH value of 5.5 and also block the TSNAs formation in the tobacco matrix system.
