云南野生水果的抗氧化性及其它生理生化特性分析

摘    要:云南野生水果资源丰富,为发掘云南野生水果中的强氧化特性及其它优异特征,本文分析了从云南各地采集的22种野生及栽培水果类材料中的过氧化物酶活性、超氧化物歧化酶活性、还原糖、蔗糖、蛋白质、总黄酮、DPPH自由基清除率及总抗氧化活性等生理生化指标。结果表明在这些不同水果中,抗氧化能力差异显著,刺萼悬钩子抗氧化性最强,有着比较好的开发前景。相关性分析结果表明总抗氧化性和水果中总黄酮含量之间显著相关,而过氧化物酶活性与总抗氧化性之间也有一定相关性但不显著。更多结果有待进一步发掘。

Analysis of antioxidant ability and other physiological and biochemical to some wild fruits from Yunnan province
Abstract:There are abundant wild fruit resources distributed in Yunnan province, in order to develop high ability of antioxidant and other characters of valuable wild fruit resources, some wild and local cultivated fruits were collected from Yunnan province. And the physiological and biochemical indexes including the activities of peroxidase, superoxide dismutase, total antioxidant, DPPH radical scavenging capacity and the contents of reducing sugar, sucrose, protein, flavonoids were analyzed in this experiment. Results indicated that the antioxidant capacity of all these different kinds of fruits was seen significantly different between one another. Rubus alexeterius Focke is deserved to be further developed because of the strongest anti-oxidant ability and the highest content of flavonoids in these wild fruits . In addition, significant correlation was seen between flavonoid contents and total anti-oxidant ability, but is not significant between POD and total anti-oxidant ability. More information still needs to be exploited in the future.
