| 摘 要： | 采用不同包装材料和充气比例,通过L9(34)正交试验研究去壳雷竹笋在超市货架温度下感官品质、褐变指数和货架期。极差分析表明,去壳雷竹笋贮藏最佳MAP条件为:0.04mm厚PE袋,O22%和CO25%。

| Abstract: | Modified atmosphere packaging was used to store bamboo shoots(Phyllostachys praecox)with different packaging bags and O 2 /CO 2 proportion.The organoleptic evaluation,browning index and shelf life were evaluated.The orthogonal experiment results indicated that the best storage conditions were0.04mm polyethylene bags,O 2 2%and CO 2 5%. |
