酶法对烟梗丝降解效果的研究

摘    要:目的]寻求不改变现有制梗丝工艺条件的酶处理技术,以提高烟梗丝的内在质量。方法]基于现有制梗丝技术和洗梗工艺条件,通过加酶洗梗处理,对烟梗的主要组成成分进行适量降解,并通过单因子试验和正交试验,比较果胶酶MG(0.32 U/g)、木质素酶MM(500 U/g)和纤维素酶MQ(1 000 U/g)降解烟梗丝的效果,确定其最佳用量。结果]方差分析表明,果胶酶以及纤维素酶对烟梗的降解效果非常显著。烟梗水解试验的最优工艺条件为:MG浓度为0.10%,MQ浓度为0.10%。在该浓度水平下,烟梗降解率可达32.50%~37.18%。结论]利用酶技术可有效降解烟梗丝中的纤维素和果胶质,可根据贮梗时间对水解产物的含量进行有效调控,从而有助于促进中间香味质的转化,提高烟梗丝的内在质量。
