影响鸡蛋中钾、钠和镁含量因素的探讨

摘    要:试验探讨了影响鸡蛋中钾、钠和镁含量的几个因素,结果表明,a.蛋鸡饲粮高钙使蛋白中钾和钠含量、蛋壳中钠含量明显降低。蛋各组分中镁含量都不受蛋鸡饲粮钙水平显著影响;b.蛋各组分中钾、钠和镁含量都不受饲粮锌水平显著影响;c.随着蛋鸡同龄的增长,蛋壳中镁含量显著升高,蛋黄中镁含量到中期后不再继续升高。蛋各组分中钠含量在后期明显降低;而蛋壳中钾含量却显著升高;d.蛋不同组分中钾含量的高低顺序为蛋白>蛋黄>蛋壳,钠为蛋白>蛋壳>蛋黄,镁为蛋壳>蛋白>蛋黄。

Abstract:Factors influencing potassium,sodium and magnesium contents in hen eggs were studiedin the experiments.The results showed that:1.Potassium and sodium content in albumenwere apparently decreased when the hens were fed with high dietary calcium.Magnesium con-tent in various parts of the egg was not significantly influenced by calcium level in hen's diet;2.Zinc level in the diet had no significant effect on potassium,sodium and magnesium con-tents in eggs;3.Magnesium content in shell was significantly increased with the rise of thehen's age.Magnesium content in yolk was significantly lower at former stage than that atmiddle and later stages.Sodium content in all parts of the egg was apparently decreased,butpotassium in shell was significantly increased with the rise of hen's age;4.Potassium contentwas highest in albumen,intermediate in yolk and lowest in shell.Sodium content was highestin albumen,intermediate in shell and lowest in yolk.Magnesium content was highest in shell,intermediate in albumen and lowest in yolk.
