| 摘 要： | 镰刀菌毒素是镰刀菌属真菌产生的多种次生代谢产物的总称，在自然界中分布极为广泛，是危险的食品污染物，对人畜健康危害十分严重。因此，关于镰刀菌毒素的研究已成为当前国际上最紧迫的课题之一。本文就镰刀菌产毒素的类型、镰刀菌毒素对植物细胞、动物细胞的毒害以及脱毒方法作一综述。

| Abstract: | Fusarium toxins are a variety of secondary metabolites produced by Fusariums which are widely distributed in nature. The Fusarium toxins are dangerous food contaminants and risks to human and livestock health. So, research on the Fusarium toxin is one of the most urgent problems. In this paper, the damage of Fusarium toxins and detoxification methods are reviewed. |
