| 摘 要： | 中国儿童的每日膳食中,普遍缺乏蛋白质和矿物质,需要在日常膳食外进行补充。在调查我国儿童目前营养状况的基础上,以儿童喜爱、美味可口和营养丰富的鱼糜制品为原料,通过添加猪肉和儿童易吸收的食品营养强化剂,研制出了无腥味、高品质、高营养性的复合鱼糜猪肉制品。该产品具有弹性好、脂肪含量低和营养丰富等特性。通过正交试验得到儿童营养鱼糜制品的最优配方为:鱼糜200g,猪瘦肉糜30g,淀粉20g,蛋清22g。通过改善鱼糜制品的加工工艺,克服了传统鱼糜制品在加热过程中发生的香味容易消失、腥味重、风味差等缺点,大大提高了产品品质。该产品是促进儿童健康成长的理想食品。
