嗜酸乳杆菌在乳品中的应用

摘    要:嗜酸乳杆菌被视为第3代酸乳发酵剂菌种,是人体肠道中的重要微生物。分析了现代乳品生产状况及存在问题,概述了嗜酸乳杆菌生物学特性、生理功能以及在乳品工业上的应用及发展趋势。

Abstract:L.acidopholus is one of probiotics that are researched and developed in th Lactic acid bacterium at present. As the third generation fermented laetie cultures,it is an important microorganism in gut. The biological character,the physiology function and the applieation in the milk industry were introduced in this paper.
