湖南省月饼卫生质量现状分析及其应对措施

摘    要:分析了湖南省连续4 a来的月饼卫生检测结果质量问题.检测结果表明,月饼质量主要存在着添加剂使用违规、微生物超标、标签标识不合格、理化指标不合格等问题.从原料、生产工艺、生产环境等方面提出了应对措施,并对消费者购买月饼提出了建议.

Abstract:The moon cake hygiene detection in recent 4 years in Hunan province was analyzed. The results showed that many problems existed in the investigated moon cakes such as violation using additive and antiseptic, excessive micro-organism, unqualified label marking and physics & chemistry indexes. Then countermeasures were proposed from aspects of raw materials, processing technology, and production environment. And advices for purchasing moon cakes were put forward.
