果蔬复合豆制品的标准化及产业化研究

目前,豆制品行业中小作坊的生产方式仍然占主导地位,相当程度的中小企业并存,不仅难以形成品牌化产业,而且使行业市场监管力度缺乏。因此实现豆制品生产的工厂化、工艺科学化、品种多样化、管理标准化、效益规模化,以及实行市场准入制度已迫在眉睫。将富含蛋白质的豆制品与富含维生素、膳食纤维和矿物质的果蔬原料相结合,为消费者提供营养结构更为合理的新型果蔬复合豆制品,极大地提高了果蔬资源和大豆资源的利用率,对提高农产品的商品率及附加值,促进农业从传统型向现代化转变,提高农业的整体素质和市场竞争力,具有一定的意义。
