摘    要:以麦角甾醇为参考指标,分析了在不同温度下籼稻和粳稻中的不同水分对其储藏过程中真菌生长的影响.确定了实验室条件下籼稻安全储存水分为13.5%,粳稻安全储存水分为14.0%;确定了稻谷安全水分曲线,可作为偏高水分稻谷短期安全储存指导.

Abstract:Herein impact of temperature and moisture content on fungus growth during the storage of nongluti- nous rice and japonica rice were analyzed in laboratory by using ergosterol as indicator. The safe moisture eontents are 13.5% and 14.0% for nonglutinous rice and japonica rice respectively as the preliminary labo- ratory research implied; Safe moisture curve for paddy rice storage was established, which could be used as the guide for the storage of high moisture content rice.
