| 摘 要： | 过氧化氢酶是一类广泛存在于动物、植物和微生物体内的末端氧化酶,其功能是催化细胞内过氧化氢分解,防止膜脂过氧化,在论述过氧化氢酶类型划分,结构特点基础上,对CAT在农业及其相关食品与乳制品业纸浆和造纸业以及农业环保上的应用等进行了介绍

| Abstract: | As one kind of oxidases, catalases can be found in almost all animals, plants and microorganisms.Catalases can catalyse the decomposition of the cellular hydrogen-peroxide and thus protect membrane lipid against peroxidation. Based on reviewing enzyme types and structure, this paper introduces the applications on food and dairy industry, paper pulp and paper making industry, environmental protection and so on. |
