金钱菇香料的制备及其在卷烟中的应用研究

摘    要:以金钱菇为原料,采用常规提取法、复合酶提取法和美拉德反应法开发新型烟用香料,并对样品进行了卷烟加香评吸试验,对样品分别采用同时蒸馏萃取前处理,对其挥发性香气成分进行GC/MS分析。结果表明,常规提取法所得香料能够使烟香增加,并对余味有一定的改善,并能使刺激性略微减弱,检测出挥发性成分3 1种;复合酶提取法所得烟用香料能够赋予卷烟特殊的香气,增浓烟香,醇和香气,改善余味,增强甜润感,检测出挥发性香气成分40种;金钱菇美拉德反应所得香料能够使烟香明显增强,香气细腻纯净,柔和烟气,减轻刺激性,改善余味,以天然和发酵金钱菇为底物的美拉德反应检测出挥发性香气成分分别为41和43种。

Abstract:The cigarette flavors are prepared by water distillation,enzymatic treatment and millard reaction from Lentinus edodes,respectively.The volatile components are analyzed by GC/MS.The sensory evaluation of cigarette treated by the flavor samples is conducted.The results show that the flavor prepared by distillation can improve aroma and aftertaste,weaken the irritant,and 31 kinds of volatile components are detected.The sensory evaluation of cigarette treated by enzymatic treatment can give the special aroma,improve aroma and aftertaste,and enhance the sweet sense,and 40 kinds of volatile components are detected.Both aroma and sweet are improved,smoke is softened by using the flavor produced by millard reaction,and 41 and 43 compounds are identified from millard reaction from fruiting body and fermented mycelia,respectively.
