摘    要:[目的]旨在了解短杂牛、西杂牛和泾源黄牛的产肉性能和肉的品质,为今后黄牛改良和育肥提供科学依据.[方法]通过测定它们宰前活重、净肉重、优质肉块、眼肌面积、肉品化学成分等,比较分析它们的产肉性能.[结果]表明:西杂牛的胴体重、净肉重均比泾源黄牛高,但差异不显著(P>0.05),而西杂牛的宰前活重、优质肉块、眼肌面积等指标...

Abstract:【Objective】This test is mainly to understand the meat performance and meat quality of short-cataloes,Si-cataloes and Jing Yuan cattle,which provides the scientific basis for the improvement and fattening of Cattle.【Method】The comparative analysis of their meat performance is by determining their live weight,net meat weight,quality meat,eye muscle area and meat chemical composition,etc.【Result】It shows that the carcass weight and net meat weight of Si-cataloes are higher than that of Jing Yuan cattle,but has no significant difference(P>0.05).The net meat weight,quality meat,eye muscle area of Si-cataloes are higher than that of Jing Yuan cattle,and the difference is significant(P<0.01).The indicators of live-weight,carcass weight,net meat weight,high meat quality,eye muscle area and meat chemical composition of short cataloes are superior than that of Jing Yuan cattle,but the deference was not significant(P>0.05).【Conclusion】Therefore,it is more effective to select short and Si-cataloes for short term fattening,especially Si-cataloes,it can be used to produce high grade beef.
