摘    要:食品分析是保障食品安全的重要手段。对食品专业的学生而言,《食品分析》和《食品分析实验》课程是食品专业的专业基础课,实践性很强。为了培养学生的实践创新能力,掌握先进的食品分析、检测方法,在多年课程教学实践的基础上,对课程改革做了一些有益的尝试和探索,如优化教学内容、加深对分析原理的理解、重视实验技能、综合评定考核成绩,取得了一定成效,有助于学生掌握知识和技能,可培养学生的规范操作、独立动手能力和合理安排时间能力,提高学生的综合素质。

Abstract:Food analysis is an important means of ensuring food safety.Food Analysis and Food Analysis Experiment are the specialized basic courses for Food Speciality with strong practicality.To train students' practical and creative ability,and grasp the advanced approaches of food analysis and detection,the course reform is explored based on the teaching practice,including optimizing the teaching content,deepening the understanding to the analysis principle,paying attention to the experimental skill,and comprehensively evaluating the examination scores.The reform has made some progress,which could make students' grasp the knowledge and skill,improve the abilities of standard operation,independent practice and reasonable arrangement of time,and increase the comprehensive qualities.
