| 摘 要： | 以紫山药皮为原料,以乙醇为溶剂提取色素,以吸光度为指标,对影响色素提取的提取剂浓度、提取温度、提取时间和料液比等因素进行研究,结果显示,色素的最佳提取温度为70℃,提取时间为1.5 h,料液比为1:8,提取剂浓度为30%。

| Abstract: | With purple yam skin as raw materials, pigment is extracted by ethanol as the solvent, absorbance as indicators. Study the factors affecting the extraction of pigment ： concentration, temperature, time and solid-liquid ratio. The result shows that the best conditions for pigment extraction were： temperature 70 ℃, extracting time was 1.5 h, and solid-liquid ratio of 1：8, the concentration of extracting agent was 30%. |
