顶坛花椒和四川茂县大红袍花椒挥发油的GC-MS分析比较

摘    要:[目的]分析顶坛花椒挥发油的含量和化学组成。[方法]利用气相色谱-质谱法(GC-MS)对贵州顶坛花椒和四川省茂县大红袍花椒的挥发油化学成分进行了分离鉴定,用峰面积归一法测定了已确定组分的相对含量,并对2种花椒的挥发油化学成分进行比较。[结果]贵州顶坛花椒共鉴定出29个化合物,按峰面积计算,检出率为99.417%,四川省茂县大红袍鉴定出38个化合物,检出率为97.685%;顶坛花椒挥发性成分中的芳樟醇含量尤其高,达到茂县大红袍的4.56倍。顶坛花椒挥发油中单萜和倍半萜衍生物含量高达93.985%,而茂县大红袍只有77.256%。感官评价表明,顶坛花椒的香味比茂县大红袍浓郁。[结论]顶坛花椒与茂县大红袍的挥发油均有多种成分和含量存在显著差异。
