摘    要:鱼丸在其定型过程中会黏附到杂质,在油炸时表面产生气泡,影响美观。通过TRIZ创新方法分析,利用功能裁剪、技术矛盾、物场分析等方法,为解决油炸鱼丸在定型环节表面杂质黏附问题提供多种方案,为TRIZ理论在鱼丸加工中的应用提供理论基础。

Abstract:Fish balls adhere to impurities in the setting process on the surface so that it will produce bubbles when frying,affecting the appearance.In this paper,TRIZ innovative method analysis,functional tailoring,technical contradictions,material field analysis and other methods were used to provide a variety of solutions to solve the surface impurity problem in the setting process of fried fish balls.This study also supply foundation for the theoretical research for TRIZ in the processing of fish balls.
