鹰嘴豆生物活性成分及其功能研究进展

摘    要:鹰嘴豆营养丰富,并且含有多糖、异黄酮、皂苷、脂肪酸等功能成分,具有降血糖、降血脂、抗氧化、抗疲劳、抗骨质疏松、抗肿瘤、抗HIV等药用功能,并且可以加工成各种保健品食用。综述了鹰嘴豆的活性成分与功能,为其进一步开发利用提供依据。

Abstract:Chickpea contains polysaccharide,isoflavones,saponins,fatty acid,and other functional components.It has the medicinal functions of reducing blood sugar,lowering blood lipid,antioxidant,anti-fatigue,anti-tumor,anti-osteoporosis,anti-HIV,and can be processed into health nutrition food.In this paper,the active components and functions of chickpea were reviewed,which provided basis for its further development and utilization.
