枣黄酮的抗氧化活力研究

摘    要:为了拓展枣果品的高值化利用,初步研究枣黄酮的体外抗氧化活性。利用3种体外抗氧化活性测试方法,即总还原力,清除羟自由基和淀粉酶活力抑制,评价枣黄酮的抗氧化能力。结果表明,枣黄酮对羟基自由基具有一定的清除能力,并能有效抑制淀粉酶活力,而且还具有一定的还原活力。同时,枣黄酮的抗氧化与其浓度有一定的正量效关系,试验结果可为枣黄酮资源的综合开发利用提供理论基础。

Abstract:In order to expand the high value utilization of jujube fruit,the antioxidant activity of jujube flavonoids in vitro was studied.In order to evaluate the antioxidant capacity of jujube flavonoids,three methods were used to test the antioxidant activity in vitro,i.e.total reducing power,scavenging of light free radicals and inhibition of amylase activity.The results showed that jujube flavone could scavenge hydroxyl radicals and inhibit the activity of amylase.Moreover,it has a certain reducing activity.The results showed that there was a positive dose effect relationship between the antioxidant activity of jujube flavone and its concentration.The experimental results could provide theoretical basis for the comprehensive development and utilization of jujube flavonoids resources.
