摘    要:随着物质生活水平的提高,人们开始重视自身健康及食品的健康营养。木糖醇,作为一种天然的功能性甜味剂,受到很多肥胖症、糖尿病等患者的关注。木糖醇是糖类代谢的中间体,进入人体不会引起血糖值升高,可以消除糖尿病人“三多”现象,因此受到很多人的关注。通过综述木糖醇的生产方法、生物特性,并从机理和应用的角度简要阐述木糖醇在不同领域的研究,为木糖醇的应用研究提供一定的参考。

Abstract:With the improvement of the material standard of living,people begin to pay attention to their own health and the health and nutrition of food.Xylitol,a natural functional sweetener,has attracted a lot of attention from obesity,diabetes and other patients.Xylitol is an intermediate of carbohydrate metabolism.It will not cause the increase of blood sugar when it enters the human body,and can eliminate the phenomenon of diabetes mellitus.Therefore,it has attracted a lot of attention.In this paper,the production methods and biological characteristics of xylitol were summarized,and the research of xylitol in different fields was briefly described from the perspective of mechanism and application,so as to provide some references for the future application research of xylitol.
