摘    要:菌酶协同发酵兼具微生物发酵和酶解的优势,能够有效降解饲料原料中的抗营养因子和有毒物质,提高饲料适口性和营养价值,缓解饲料蛋白资源缺乏的现状.文章对菌酶协同发酵常用菌种和酶、发酵工艺影响因素、菌酶协同发酵饲料的优势及发酵饲料在养殖业中的应用进行综述,为菌酶协同发酵生产蛋白饲料的研究提供参考.

Abstract:Bacteria and enzymes synergy fermentation has the advantages of microbial fermentation and enzymatic hydrolysis, effectively degrades the anti-nutrient factors and toxic substances in feed raw materials, improves the palatability and nutritional value of feed, alleviate the current situation of feed protein resource shortage. In the paper, the common bacterial and enzymes, the influencing factors of fermentation process, the advantages of the fermentation feed and the application of the fermentation feed in the breeding industry are summarized, in order to provide reference for the study of co-fermentation of bacterial and enzymes to produce protein feed.
