黑大豆化学成分研究

摘    要:利用气相色谱质谱联机的方法和氨基酸自动分析方法,对黑大豆的化学成分进行研究,测定了黑大豆中脂肪酸和氨基酸的含量。结果表明:黑大豆含5种脂肪酸和16种氨基酸。黑大豆富含亚油酸和人体必需氨基酸,具有较高的营养价值和保健作用。

Abstract:To study the chemical constituents in the seed of black soybean. The constituents and contents were isolated and identified by means of GC- MS and amino acid automatic analysis instrument. The result showed that five kinds of fatty acids and sixteen kinds of amino acids were identified in the seed of black soybean, there are 9,12 - octadecadienoic acid and six kinds of essential amino acids in the seed of black soybean. It auggests that they have higher nutritious value and function of good-health.
