摘    要:对禾本科寒竹属的3个竹种,即合江方竹、金佛山方竹和狭叶方竹竹笋的营养成分、矿质元素含量、氨基酸含量进行分析。结果表明:合江方竹和金佛山方竹的竹笋品质相当,稍优于狭叶方竹;采自不同海拔高度、不同时间段的合江方竹竹笋的营养状况没有多大变化,其风味基本一致,可在适生的海拔范围内加以发展。

Abstract:The nutrients, mineral elements and amino acid in bamboo shoots of Chimonobambusa hejiangensis, Ch. utilis and Ch. angustifolia were analyzed. The results showed that the bamboo shoot quality of Ch. hejiangensis and Ch. utilis were similar, but better than that of Ch. angustifolia. The bamboo shoots of Ch. hejiangensis collected from different altitudes and times during the shooting period had little changes in the nutritional status. So it could be more planted in the range of suitable altitudes.
