摘    要:阐明了烟草酶促棕色化反应机理及发生条件,介绍了烟草酶促棕色化反应研究及调控现状,剖析了现今人们对烟草酶促棕色化反应机理及发生条件认识上存在的问题和不足。在此基础上探讨了烟草酶促棕色化反应的科学原理,并展望了烟草酶促棕色化反应的研究方向。

Abstract:This paper introduced the research and regulation of tobacco enzymatic browning reaction,analyzed the existing problems and deficiencies in understanding the mechanism and occurrence conditions of tobacco enzymatic browning reaction,and clarified the mechanism and occurrence conditions of tobacco enzymatic browning reaction.On this basis,the scientific principle of enzymatic browning reaction of tabacco was discussed.The development trend of enzymatic browning reaction in tobacco was prospected.
