辣椒红素提取的工艺研究

摘    要:目的]筛选最佳提取工艺条件,并从原料的处理和提取剂的选择上改良传统工艺。方法]利用索氏提取法从干红辣椒中提取辣椒红素,以辣椒红素的色价为指标在单因素实验的基础上进行正交实验,并对实验结果进行方差分析。结果]辣椒红素的吸光度在提取温度为80℃时最高。当温度大于80℃时,辣椒红素的得率与80℃提取时的相差不大,而吸光度小于80℃提取时的。提取时间为4h时,辣椒红素吸光度最高,大于4h时辣椒红素的得率偏高。提取辣椒红素的最佳工艺条件是以正己烷为提取剂,在80℃和料液比为1:20的条件下提取4h,在此条件下重复3次的辣椒红素色价分别是68.6、69.0和68.9。结论]提取辣椒红素的主要影响因素是温度,其次是提取时间,影响最小的是料液比。

Abstract:Objective]The purpose was to screen the optimum extracting technology and improve traditional technology from raw material treatment and extractant selection.Method] The capsanthin was extracted by soxhlet extraction method from dry and red capsicum.The orthogonal experiment with color value of capsanthin as index was conducted on the base of single factor experiment and the variance analysis was conducted on the experimental results.Result] The absorbance of capsanthin was highest at the extracting temperature of 80 ℃.When the temperature was higher than 80 ℃,the yield of capsanthin was no more different from that at the extracting temperature of 80 ℃,but the absorbance was less than that at the extracting temperature of 80 ℃.The absorbance of capsanthin extracted for 4 h was highest,and the yield of capsanthin was higher when the extraction time was more than 4 h.The optimum technology of extracting capsanthin was:with n-hexane as extracts,temperature of 80 ℃,ratio of material to liquid of 1:20,extraction time of 4 h,under which,the capsanthin color values of 3 repeats were 68.6,69.0 and 68.9 resp.Conclusion] The main influence factor of extracting capsanthin was temperature,the next was extraction time,and the influence of ratio of material to liquid was smallest.
