摘    要:摘要:为筛选高品质风味番茄品种,明确优质番茄品质指标,在日光温室对22个不同番茄品种果实 的商品性状、风味品质和营养品质指标进行了测定,应用层次分析法(AHP)对所测指标量化分析,构 建番茄果实的综合评价体系,依此确定了高品质的番茄品种。结果表明:影响番茄品质指标的权重排序 为:番茄红素>可溶性糖>可溶性固形物>维生素C>硬度>有机酸>可溶性蛋白>糖酸比>单果质量> 果形指数,其中番茄红素、可溶性糖权重和为0.646 4,是决定番茄果实营养品质的最主要指标。依据果 形指数、单果质量及硬度指标筛选出商品性状较好的品种为瑞星五号、意佰芬-5、中杂302;依据可溶性 固形物、有机酸、糖酸比及可溶性糖含量指标筛选出风味品质较好的品种为惠福、嘎啦果、吐尔奇;依 据可溶性蛋白、维生素C及番茄红素含量指标筛选出营养品质较好的品种为惠福、京番309、吐尔奇。基 于产量、品质的综合评价,最终确定京番401、瑞星大宝、金棚八号、京番309及普罗旺斯5个品种为优 质高产番茄品种。

Abstract:Abstract: In order to screen high-quality flavor tomato cultivars and clarify the quality indexes of highquality tomato, the indexes of commodity characters, flavor quality and nutritional quality of 22 different tomato cultivars were determined in the solar greenhouse, and the measured indexes were quantitatively analyzed by using the analytic hierarchy process (AHP), and the comprehensive evaluation system of tomato fruits was established. Based on the above, the high-quality tomato cultivars were determined. The results showed that the order of coefficient weight of tomato quality indexes was lycopene > soluble sugar > soluble solid matter > vitamin C > hardness > organic acid > soluble protein > ratio of sugar and acid > single fruit weight > fruit shape index. The sum of lycopene and soluble sugar weight coefficient was 0.646 4, which was the most important index to determine the nutritional quality of tomato fruit. According to the fruit shape index, single fruit quality and hardness index, the cultivars with better commercial characters were selected as ''Ruixing No.5'' ''Yibaifen-5'' and ''Zhongza 302''. According to the indexes of soluble solid matter, organic acid, sugar acid ratio and soluble sugar content, the cultivars with better flavor quality were selected as ''HuiFu'' ''Galaguo'' and ''Tuerqi''. According to the content of soluble protein, vitamin C and lycopene, the cultivars with better nutritional quality were selected as ''HuiFu'' ''Jingfan 309'' and ''Tuerqi''. Based on the comprehensive evaluation of yield and quality, the five cultivars of ''Jingfan 401'' ''Ruixing Dabao'' ''Jinpeng No.8'' ''Jingfan 309'' and ''Provence'' were finally determined as high-quality and high-yield tomato cultivars.
