香辛料提取物的抗氧化活性

摘    要:以16种香辛料为原料,采用超声波辅助萃取法提取其抗氧化成分,以DPPH清除率和抑制邻苯三酚自氧化反应速率为指标,测定该16种香辛料提取物的抗氧化活性.结果表明:16种香辛料中草果的抗氧化性最好,但提取率偏低;桂皮与草果的提取率和抗氧化性差异不大;而香叶的提取率和抗氧化性均较好.

Abstract:Sixteen species of spices were extracted by using ultrasonic assistant extraction method,and the antioxidant activities of the extracts from the 16 species of spices were determined by using DPPH and pyrogallol auto-oxidation methods. The results showed that among the spices Amomum tsao-ko had the highest antioxidant activity but with low extraction rate. No notable difference was found in extraction rate and antioxidant activity between the cassia and Amomum tsao-ko,whereas both the antioxidant activity and the extraction rate of Pelargonium were high.
