淳安花猪肉切块质量点评

摘    要:本文对80 kg级淳安花猪肥育猪胴体作了肉切块质量评价。其切块具有红度高、系水力强、大理石纹细致等上乘表现。本测定提示淳安花猪具有皮厚、膘嫩、肉细的晚熟腌肉型肉质切块特点,同时具备极品鲜肉和腌肉原料的品相。

Abstract:The meat cuts of 80 kg Chunan Spotted finishers were reviewed for the meat quality.The cuts have high redness,strung water holding capacity,and fine marbling texture.The cuts imply that the meat cuts of Chunan Spotted pig carcass are characterized by thick skin,tender fat,and fine texture which are the natures of later matured bacon type.The cut can be used both as top fresh meat and as cured.
