摘    要: 研究了白肋烟晾制过程中抗坏血酸含量的变化。结果表明,在晾制前期,当烟叶从第84h开始大量失水时,烟叶颜色逐渐变褐,丙二醛含量急剧增加,抗坏血酸氧化酶活性达到最高,抗坏血酸含量下降;水分与抗坏血酸氧化酶呈显著负相关(r=-0.747*),抗坏血酸与色素呈显著正相关(r叶绿素=0.808*, r类胡萝卜素=0.914**),说明在晾制前期水分减少时,抗坏血酸氧化酶活性相对增加,导致抗坏血酸含量下降,并且抗坏血酸含量的降低与烟叶颜色变化是同步的。

Abstract:Changes of ascorbic acid (ASA) during burley tobacco air-curing, were studied. The result showedthat the leaves began changing gray when large amount of water evaporated from leaves at 84 hours. It also showedthat malondialdehyde (MDA) was increased, so did the AAO activity, but the ASA content was descended at thattime. There was a remarkable negative correlation between water and AAO (r=-0.747*),but it was a marked positivecorrelation between ASA and pigment(rchl=0.808*, rcar=0.914**). The decrease of ASA content was due to theincrease of AAO activity when water reduced at the former period, and the decrease of ASA was in accordancewith the change of pigment.
