摘    要:采用固定床式树脂柱对苹果汁进行吸附处理,不仅可以大幅提高苹果汁的色值,而且对苹果汁的透光率也有一定程度的提高,并可有效降低苹果汁的浊度;而对苹果汁的糖度、酸度、pH值等理化指标无明显影响。在实际生产中应用此项技术,对于苹果浓缩清汁产品的理化品质特别是色值的提高具有显著的效果,并具有高效、无害、成本低廉等优点。

Improvement of the Color Value and Clarity of Clarified Apple Juice Concentrate Treated with Adsorbent Resins
Abstract:The fixed bed column of adsorbent resins was used to improve the color value and clarity of clarified apple juice and its concentrate products. Results showed that not only the color value could be significantly improved by treating with adsorbent resins but the clarity also could be improved to some extent and the turbidity was lowered with no affection to the sugar acidity and pH of the apple juice. When applied in the mass production of clarified apple juice concentrate the technique has a significant effect on the improvement of the physical and chemical qualities especially the color value of the products. Furthermore the technique also has some advantages such as efficiency harmlessness and cheapness.
