微波灭菌对牛乳中Vc的影响

摘    要:为了探讨微波灭菌对牛乳中Vc的影响,研究了微波灭菌过的牛乳中Vc含量。通过双因素试验得出了牛乳层厚度和微波功率对Vc损失量的影响曲线,建立了相应的回9-2方程。利用优化技术得出了微波灭菌的最佳参数组合为:牛乳层厚度66.3mm,微波功率469W。

Abstract:This paper studied the effects of microwave sterilization on Vc in milk. By experiments, the relations between the loss of Vc and the milk thickness and the microwave power were obtained. The regressive equation was established. And the microwave sterilizing optimal parameters was obtained: the milk thickness was 66.3mm, the microwave power was 469W.
