| 摘 要： | 在合成交联一羧甲基复合变性淀粉的基础上，测试了多种添加剂对产品透光率的影响。结果表明，蔗糖使复变淀粉糊液的透光率增大，氯化钠、碳酸氢钠、酒石酸和柠檬酸使其透光率变小，而乳糖与葡萄糖对其透光率的影响不大。

| Abstract: | On the basis of preparation for crosslinking carboxymethyl double modified starch, the influences of different addition agents to the transparence of modified starch paste are determined. The results indicate that sucrose increases transparence, but sodium chloride and sodium bicarbonate and tartaric acid and citric acid decrease transparence, and lactose and glucose have little influence. |
