摘    要:脉冲强光(PL)是一种新型非热加工技术,在果蔬保鲜领域中有广阔的应用潜力.综述了脉冲强光技术在果蔬保鲜领域应用研究的最新进展,并总结了其杀菌和钝酶的机制,以期为脉冲强光技术在果蔬保鲜中的广泛应用提供参考借鉴.

Abstract:Pulsed light(PL) is a new type of non-thermal processing technology, which has broad application potential in preservation of fruits and vegetables. This article reviewed the latest progress of the application of pulsed light technology in the field of fruits and vegetables preservation, and summarized the mechanisms of its sterilization and enzyme inactivation. This article provided references for the wide application of pulsed light technology in the preservation of fruits and vegetables.
