几种抗氧化剂的溶解特性及其在大豆油中的应用

摘    要:为探讨抗氧化剂的溶解特性及其在油中的抗氧化作用,进行了几种抗氧化剂在水、油、乙醇、乙酸乙酯中的溶解试验及其在油中的抗氧化性试验,结果表明,几种抗氧化剂在水中的溶解性依次为:抗坏血酸,儿茶素,特异基对苯二酚,2,6二叔丁基对甲酚,维生素E,在油中的溶性依次为:维生素E,特丁基对苯二酚,2,6-二叔丁基对甲酚,抗坏血酸,儿茶素,在油中的抗氧化作用依次为:特丁基对苯二酚,抗坏血酸,维生素E,儿茶素,2,

Abstract:This paper studied the solubility of antioxidants in water,ethnal,ethyl acetete and tea seed oil, and the antioxidigation of antioxidants in oil. The results showed that the water solubility decreased in this turn:ascorbic acid catechin,TBHQ,BHT,Vitemin E successively;oil solubility decreased in this turn:Vitamin E,TBHQ,BHT ascorbic acid, catechin;antioxidizability of antioxiants in oil decreased in this turn:TBHQ,ascorbic acid,Vitamin E catethin,BHT.TBHQ was an optimal antioxidant for it had strong antioxidization and could was dissolve in all dissolvent mentioned above,It could be used in many kinds of foodstuff especially in high quality oil.
