紫薯色素的提取及其稳定性的研究

摘    要:[目的]研究紫薯色素的最佳提取方法以及紫薯色素的稳定性。[方法]通过单因素试验对紫薯色素最大吸收波长、最佳提取溶剂、浸提时间及温度进行探讨,并对紫薯色素的稳定性进行了研究。[结果]紫薯色素的最佳提取条件为:最大吸收波长530 nm、最佳提取溶剂为5.0%柠檬酸、料液比1:10、浸提时间1 h、浸提温度60℃。稳定性研究表明:色素的颜色和稳定性易受pH值的影响,酸性时较稳定;有较强的耐光性,耐还原能力比耐氧化能力强。[结论]紫薯天然色素的提取工艺及其稳定性研究结果为紫薯天色色素的工业化提取及规模化应用奠定了基础。
