烤烟香型的重要影响因子及香型指数模型的构建初探

摘    要:目的]为烟叶香型风格的定位与评价提供理论依据。方法]以不同地区烤烟的中部叶片为材料,测定其香气成分及常规化学成分,并对烟叶进行单料评吸。采用逐步回归的方法建立烟叶香型指数模型。结果]烟叶中有9种香气成分对其香型的影响较大。对烟叶浓香风格形成贡献由大到小的影响因子为茄酮〉二氢猕猴桃内酯〉异戊酸〉二氢-β紫罗兰醇〉法尼基丙酮〉苯甲醇〉巨豆三烯酮;对烟叶清香型风格形成贡献由大到小的影响因子为大马酮〉棕榈酸〉甲酯。当Y香型指教〈2.8时烤烟为清香型,Y香型指数在2.8~3.8之间时,烤烟为中间香型,Y香型指数〉3.8时烤烟为浓香型。结论]所建立的烤烟香型指数模型对烤烟香型风格的判断准确率为87.9%。
