内蒙古产荞麦和莜麦中淀粉及非淀粉多糖的含量研究

摘    要:荞麦和莜麦是内蒙古地区特产谷类,它作为功能性保健食品,日益受到世界各地营养学家的青睐。本研究利用葡萄糖氧化酶/过氧化酶方法测定了内蒙古乌兰察布盟地区所产荞麦和莜麦的淀粉含量。并用气相色谱法测定了此两种麦类的可溶性和不溶性的非淀粉多糖的含量,并且对其非淀粉多糖的各组成单糖的含量采用糖醇乙酯衍生物制备气相色谱法进行了测定,为内蒙古产荞麦和莜麦的种植质量,及该类食品的开发研制,特别是莜麦的开发,提供了科学的营养学依据。

STUDY ON CONTENTS OF STARCH AND NON-STARCH POLYSACCHARIDES OF BUCKWHEAT AND NAKED OAT PRODUCTED IN INNER MONGOLIA

Abstract:The buckwheat and naked oat were producted specially in Inner Mongolia the contents of starch of buckwheat and naked oat grown in the areas of WuMeng were determined by the spectrophotometric method. And the contents of soluble nonstarch polysaccharides and insoluble non-starch polysaccharides were determined by chromatography. At the same time,the analysis of monosaccharidels by GC.Monsaccharids was condrcted with sodium borohydride and the resulting alditols were acetylated using 1-meghyl-imidazole as catalyst. The alditol acetates were competely separated by HPX 70 quartz glass capillary Gas Chromatography.The results shown that the naked oat and buckwheat grown in WuMeng had lower contents of starcn and had higher contents of non-starch polysaccharides.Exprcially the naked oat had higer contents of NSP than the buckwheat.
