| 摘 要： | 对我国传统烟熏鱼加工中的烟熏汁进行Ａｍｅｓ微生物系统（沙门氏菌／微粒体）的致突变检测，试验结果表明，烟熏汁中有致突变物存在。据此，对烟熏鱼加工制作提出四点改进建议。
