涂膜保鲜剂对鸡蛋壳薄斑及蛋品质的影响

摘    要:本试验旨在研究涂膜保鲜剂对蛋壳薄斑及蛋品质的影响。选择同日产无薄斑海兰褐鸡蛋185个分为对照组、液体石蜡组和聚乙烯醇组,每组60个,储藏22d,每5d左右观察一次薄斑的生成情况,并抽取薄斑蛋测定蛋品质情况。结果显示,随储藏时间的延长,各试验组鸡蛋薄斑比例有上升趋势,蛋品质有下降趋势。储藏5d后,对照组失重率显著高于(P<0.05)液体石蜡组和聚乙烯醇组,聚乙烯醇组哈夫单位显著(P<0.05)高于液体石蜡组。储藏22d后,3个试验组的失重率均存在显著差异(P<0.05);对照组的蛋白高度、哈夫单位、分级评分均显著低于(P<0.05)液体石蜡组和聚乙烯醇组,而聚乙烯醇组与液体石蜡组差异不显著(P<0.05)。另外,薄斑蛋比例与蛋白高度及哈夫单位均存在极显著的相关性(P<0.01)。结果表明,两种涂膜保鲜剂对抑制薄斑生成、保持鸡蛋品质具有明显作用。
